Preparation time: 90 minutes

1.3 kg aubergines, Salt, 3 onions, 2 cloves of garlic, 400 g minced meat, 125 ml white wine, 2 tblsp. tomato purée, Pepper, freshly-milled, Cinnamon powder, 200 g sheep's milk cheese, 2 tblsp. parsley, finely chopped, 2 egg whites, 2 tblsp. butter, 2 tblsp. flour, 500 ml milk, 2 egg yolks, 8 tblsp. Kefalotiri cheese or Parmesan, 1 pinch of nutmeg, freshly grated, Plus:, Oil for frying and to grease the dish
